Today’s Kitchen Adventure: Dosa vs. The Pan That Stopped Giving

Gather around, my curious readers, for today’s story isn’t just about dosa—no, it’s about life, change, and yes, crispy surprises that show up when you least expect them. So grab your tea, coffee, or masala chai, and let’s dive in!


It was a regular evening in my kitchen (recently I have been spending more time in my kitchen again and enjoying being creative and trying new things or  combining different things for a unique spin for myself), and I decided to make dosa. Now, I have done this before. Heck, I am no newbie. I had this trusty old nonstick pan—a pan that has seen its fair share of golden, crispy dosas. You know, the kind of dosa that gives you that satisfying crunch when you fold it over. Yeah, that pan!!!!

The batter was store-bought, but I knew it worked because I had used it before and got dosa perfection. Today, I was confident. So, I heated up the pan, poured the batter, and...

Well, the first dosa turned out like a sad crumbling pancake. But hey, the first dosa always has some issues, right? It’s like the test run. I wasn’t too worried. I got back at it, but—oh no, the second one? That didn’t just fail. It stuck. It curled up like mini dumplings, taunting me as I stood there, spatula in hand with all the force and pressure I could gather, wondering what cosmic force had betrayed my perfect dosa dreams.

Now, here is where my inner innovator kicked in. I thought, “It can’t be me, right? Must be the batter. It’s always the batter.” So, I pulled out a trick from my old playbook and added some rava. If you have ever cooked Indian food, you know that rava (semolina) is the magic dust that fixes all. Crispy dosas? No problem! I was certain it would work now. I stood there, smug as a dosa pro, ready for redemption.

And what did I get?

More mini dumplings. ;)

I was frustrated. My dosa dreams were crumbling faster than I could fix them.

Then it hit me—maybe, just maybe, it wasn’t the batter. Maybe the old nonstick pan had finally given up on me. I looked around the kitchen and spotted this shiny new pancake pan that I had bought a while back, inspired by my mom's collection in India, but not used much. It had these cute little four slots, usually used for—well, pancakes. But hey, desperate times call for desperate measures. Plus, I had already given up on dosas and figured I could at least make uttapam (the chunky cousin of dosa) by adding some onions, tomatoes, and green chilies to the batter. What did I have to lose?

So, I poured the batter into those slots and braced myself for more failure.

But then, as if the universe finally decided to stop messing with me, out came four perfectly golden, crispy uttapams. Voila! I was back in business.


Now, what’s the lesson in this crispy catastrophe?

1. Just because something worked well before doesn’t mean it will work forever.
My old pan had served me well in the past, but today? Not so much. Things, tools, and even people sometimes stop working the way they used to. And that’s okay. It’s a sign to move and change things up.

2. Don’t bang your head against the wall (or pan) when things aren’t working.
I was convinced the batter was the problem, but it wasn’t. Sometimes, you’re focusing on the wrong issue. A change in tool—or even environment—can be the breakthrough you need.

3. When life gives you dosa batter, but no dosa, make uttapam.
Or at least try. Don’t be afraid to adapt when things don’t go as planned. You might just end up with something even better than you expected.


So, the next time you’re frustrated that something isn’t working—whether it’s a work project, a relationship, or your beloved dosa recipe—take a moment to pause. Maybe it’s time to change the tool. Or maybe it’s time to change you.

After all, life’s big lessons come in small crispy packages—even if they sometimes look like mini dumplings at first. 😜

Flying Cars (eVTOLs) - Are we there yet?

 Well, while I certainly imagined about autonomous cards since my 5th grade, I have to admit, I did not imagine (at least my gold fish memory doesnt recall it) flying cars in our future!!

Well, I first came across them through my work, as a strategic futurist, where we looking at future technologies and how things would change and how certain TV shows predicted the future much better...

It seems Simpsons get the credit for most of the futuristic inventions in TV show, and of course there are some movies, but again, I have to admit, whilst I did watch a few episodes of The Simpsons, now and then, it wasn't a show I grew up with...So imagine my amusement when I first learned about eVTOLs (Electric Vertical Take-off and Landing Aircrafts) about 3 years back! They definitely seemed light years away..and then..

  • We came across a signal, Hyundai was building an airport in UK for its eVTOL!!! - eVTOL Airport Hyundai
  • And then got to know about Joby Aviation, and not just that, but also that they are listed on the Stock Exchange in US and that Uber sold its flying taxi business Elevate to them? huh!!!
  • And then more recently, when I attended Future of Everything Festival in NYC, hosted by WSJ, there were mentions of eVTOLs by Ford's CEO Jim Farley, predicting eVTOLs will be visible by 2025 and then FAA's acting administrator Billy Nolan, sealed the deal, when he announced, Yes, they are working on blueprint for regulations of eVTOLs in the US and they plan to have it ready by mid-year 2024, meaning, some test runs could happen as early as end of 2024 and we could see some commercial pilots in cities like NYC, LA, DFW by 2025?? Wow!!

Well atleast now with all the developments in AI, and not to mention atleast some of Level3 and Level4 autonomous driving, maybe Level 5 is just 10 years away?

Difference in staying at a luxury brand

In the last few years I have traveled significantly and generally I stay at the courtyards, Marriott, Doubletree or Embassy Suites without being picky especially for my work travels.  For my personal travels though, I prefer and love the Marriott brand.  Recently I attended a conference and it was being held at the Ritz Carlton in DC.  Since it was just for a one night last minute stay, I ended up booking at the Ritz (though shocked at their high rates, but then it is DC, everything is pricey here). But after a one night stay, I truly believe the price is justified and it would definitely be something I would pay for, if the intention of my travel is luxury.  It was a fantastic experience in customer service and I can understand the loyalty from customers deciding to chose that brand over its competition.

From the moment I stepped out of the can, the attendant asked me for my name, which may seem casual at the time, till I realized the main purpose was that when I went inside the hotel to the check in desk, they addressed me by my name, had my keys ready for check in.  Had to give my id and credit card for verification and bingo, I was done with the check in process..so smooth and so quick...the room was nothing extraordinary.  I have stayed at Caesars palace, Venetian, Beau Rivage Palace and other Marriott hotels and it was comparable, but again the whole idea of luxury is service and comfort of the customer.  Since I was attending the conference, again the interaction with the staff was not much, till when I checked out and realized I needed to finish a file to send out last minute, so was standing in the bar area with my bags and laptop on a coffee table, working on a file, when one of the bartender comes in and gives me a bar stool to sit comfortably to fish my task at hand.. I was genuinely amazed by the attention to detail followed by each employee part of the hotel family.  Now the next thing, which has never happened to me before, but I realized I forgot my charging cable for laptop and one of the employees checks immediately if my room was already serviced and if they found something and the runs upstairs and returns with my charging cable in less than 10
Minutes.. Truly impressive...

A disclosure that this was not my first time at this hotel.  I have hosted our company event at this hotel 3-4 years ago and it was completely amazing with our customers. They were impressed with the food and service they received as well. I had never stayed at the hotel, but it was definitely a fabulous experience.
